Stainless is not ideal to burn in. Although it won't oxidize it doesn't handle heat that well. Our pits being thick gauge steel, handle the heat just fine and radiate beautifully. As far as oxidation, that is on the surface and once all the raw metal has a coating, the process pretty much quits.
